His distilling journey began at the University of Western Ontario, where he earned honors in a double major in biology and economics. His experience only furthered as he trained abroad (in areas such as Scotland, London UK, and US) while educating himself in the art of distilling.
Eventually, Niagara lured Geoff home as the ideal place to put down some roots. Small-town friendliness, abundant fruit, a close proximity to neighbouring wineries and a well established wine culture — the region was a perfect fit

Peter has spent a majority of his life traveling the world in search of new and interesting spirits as well as botanicals and herbs. Peters ambitious, ‘Never Stop Experimenting’, philosophy has pushed him to create the wide range of unique flavours and aromatics associated with Dillon’s spirits.
Gary’s management background includes over 30 years of experience leading and managing both private and public technology and consulting companies. Now as a consultant and management coach at Siena Partners, his well honed patience has come in handy focusing this bunch of kids in this particular candy store.
