Watermelon Shrub Collins

• 1 1/2 oz. Dillon’s Unfiltered Gin 22
• 3 dashes Dillon’s Hot Pepper Bitters
• 1 1/4 oz. watermelon shrub
• 8 mint leaves (plus some for garnish)
• 1 oz. soda water

Cocktail Preparation:

1. To a cocktail shaker add mint leaves and muddle lightly.
2. Add Dillon’s Unfiltered Gin 22, watermelon shrub and bitters.
3. Fill shaker with ice and shake until frosty. Strain into a collins glass filled with ice.
4. Add soda water.
5. Garnish with fresh mint.


• 2 cups watermelon juice
• 1/2 cup sugar
• 3/4 cup white wine vinegar

To make the watermelon shrub; juice enough watermelon to yield 2 cups of juice. Add 1/2 cup of sugar and 3/4 cup of white wine vinegar to juice in a large mason jar. Shake well until sugar is dissolved. Cover with lid and leave overnight if possible.
