Made with blackberries picked in our own gardens (thornless bushes, thankfully!). A touch of smoky cardamom among other spices rounds out the dark berry flavour. A great addition to your classic G&T.

Hot Pepper Bitters
Made using peppers from our own gardens; habanero, jalapeno and Hungarian hot wax peppers. Combined with the fragrant and spicy aroma of red peppercorns and long pepper plus the tartness of lemon give the perfect complement to a Caesar or Bloody Mary or the perfect amount of spice and background heat to some fruit-based cocktail.

A great add-in to your usual old pint or even in an orange or pineapple based summer cocktail for a bit of added spice and citrus aroma

The bitterest of the bitters, crafted in the authentic style of real absinthe. Fennel, anise, hyssop, and other herbs temper the strong wormwood, that you can find growing in the garden just outside the Sipping Room doors. Perfect for the classic Sazerac cocktail.

A rich bitters created from only local rhubarb and natural botanicals. We start with fresh-pressed rhubarb juice from our own gardens, combined with a touch of star anise and ginger plus several other herbs to make a unique bitters that is tart but not overpoweringly so.

DSB Bitters
Our hard working multi-purpose bitters. Starts with locally-grown cherries, add a mixture of 11 herbs and spices, and there is our take on a classic aromatic bitters. Aroma of cherries, with overtones of vanilla, cloves, allspice, and cassia providing the complex of flavours and scents.

Overwhelmingly pear, with vanilla, ginger and cubeb to add a slightly peppery finish. Our Pear Bitters start with fresh-pressed pear juice from local orchards, mixed with a blend of exotic and fragrant spices including fresh vanilla beans, allspice berries and others that still allow the delicate pear flavour to shine through.
