We began this journey back in 2012 with a lot of passion, drive, commitment, and a big dream. A dream to make the best possible spirits and be honest at every step. It takes an honest day’s work in the truest sense to make honest to goodness spirits.
We are dedicated to crafting exceptional spirits that embody the rich traditions of distilling while embracing a modern, artisanal approach. Located in the heart of Ontario’s Niagara wine region, our distillery is founded on a passion for quality, creativity, and a deep connection to the land.

In tandem with local farmers
We like to use the best ingredients. That’s why we distill amongst the best produce in Canada in the Niagara peninsula. We like to know the people who grow the ingredients that go into our spirits. That way we know it’s good. We like using 100% rye. We’re Canadian. That’s why. We let the ingredients and the spirits we make, speak for themselves. Some things need to be experienced, or in our case tasted to be understood.

Our commitment to quality starts with our ingredients. We use locally sourced fruit, fresh botanicals, and grains, ensuring that every bottle we produce is infused with the purest flavours of the region. By partnering with local farmers, we support sustainable agriculture and ensure that our ingredients are as fresh and natural as possible.

We’re more than just spirit makers
Since opening our doors in 2012, crafting small batch spirits has been at the heart of what we do. Over the years, as our palates expanded and the cocktail scene evolved, we found ourselves increasingly intrigued by the idea of creating ready-to-enjoy cocktails. The challenge? Delivering the same handcrafted quality and bold, locally inspired flavours that Dillon’s is known for, but in a convenient, ready-to-sip format.
In 2022, we embraced the opportunity and launched our Gin Cocktails, followed by our Vodka Cocktails. Made using our award-winning spirits and infused with carefully selected botanicals and fruits, these cocktails offer convenience without compromising on taste.
