Ingredients:
• 1 oz. cranberry syrup (see recipe below)
• 0.5 oz. fresh lemon juice
• 1.5 oz. Dillon’s Method 95 Vodka
• Dillon’s Bitter Cranberry
• Club Soda
Preparation:
In a rocks glass combine cranberry syrup, lemon juice, and vodka. Add a few dashes of Dillon’s Cranberry Bitters. Fill with ice and top with soda.
Cranberry Syrup:
• 2 350g packages of fresh cranberries (approximately 6 cups)
• 3 cups water
• 3 cups sugar
Combine cranberries, water and sugar in a pot and bring to a boil over medium heating, making sure to stir the mixture to ensure all the sugar is dissolved. While heating the mixture use a potato masher to crush the cranberries to help extract the juice. Once the mixture starts to gently boil and the sugar is dissolved, remove from heat and let cool. Be sure to not boil the mixture longer than a few seconds otherwise you will release the pectin in the fruit and you’ll have cranberry sauce not juice! Once the mixture is cooled, stain out the fruit in a sieve lined with cheesecloth. You may need to strain the juice a few times in order to ensure there are no seeds. Makes approximately 4 cups.
