We’ve all had a bad Schnapps experience. You’d be lying if you said you haven’t. But trust us, this isn’t your old school schnapps. We’ve taken everything that we love about being in the heart of Niagara and put it into a bottle. We are excited to present our local take on this classic liqueur.
The Golden Plum Schnapps is a spin on the classic North American schnapps style. Typically made with neutral spirit and artificial flavourings, ours is crafted with our rye grain spirit as the base and to that we are adding fresh golden plum juice and fermented juice. We then sweeten it with non-GMO organic cane sugar to 170g/L.
It is fresh and clean with loads of crisp tart plum aromas and taste. It is 100% natural, the way we like it.
The Negroni. The most classic of the classics. A little bit bitter, a little bit sweet. And so easy to enjoy. We’ve done all the work for you!
Crafted using three spirits, in equal measure. Our Dry Gin 7, Sweet Vermouth and the Professor Dillon’s aperitivo.
Dry Gin 7 – A traditional dry style gin made by vapour distilling through juniper and other botanicals. This classic gin is made from a base of 100% Ontario rye grain.
Vermouth – A tradtional Vermouth created with Niagara wine as the base, fortified with our grape spirit and finished with botanicals like wormwood,vanilla, chinchona, gentian, sarsaparilla and citrus.
Bitter Aperitivo – crafted by macerating citrus, rhubarb, wormwood, violets and a touch of cinnamon in our rye spirit base, this is our take on the classic Italian style bitter.
We scoured every farm in Niagara and found enough black currants thanks to our new friends at Ridge Berry Farms in Ridgeville (just about a 15 minute drive from the distillery) to bring you this new batch of Cassis.
The fresh black currants macerated for three months in our 100% Ontario rye grain spirit before it was strained, filtered, sweetened slightly and bottled.

Made using only fresh Niagara peaches and our Ontario rye as the base, we are proud to introduce an authentically Niagara Peach Schnapps. This is most definitely not like the Schnapps’ of days gone by. It’s fresh and clean, half the sweetness but with loads of COOL!!!!!
Distilling in Niagara means we’re surrounded by farmer friends with the bounty of fresh fruit and ingredients that we select for our farm to glass spirits.
Another primo example of taking a classic liqueur and putting our own local twist on it! We’ve crafted our Black Walnut Amaro using local fresh black walnuts picked from the end of Tufford Road and steeped in our 100% Niagara grape spirit base. Some walnuts have steeped for over 2+ years. The rich, nutty spirit base is then blended with Niagara wine and botanicals and sweetened so bring a clean balance of bitter and sweet to the table.
With a hint of Vermouth like character, the Black Walnut Amaro plays perfectly with our Rye Whisky for a spin on the classic Manhattan.
